I was looking for recipes online when I discovered this Mary Berry recipe. I bought all the ingredients and I put my own twist on the recipe. It’s now out favorite recipe and we’ve had it numerous times. My boyfriend loves it and even my two children, 4 & 1. This dish is perfect for Autumn/Winter time.
Syns: 1 syn per sausage
- Baby potatoes
- 2 peppers
- 2 carrots
- 2 parsnips
- 1 onion
- 1 pack of sausages (I use Quorn)
- 2 oxo cubes
- 1 tbsp mixed herbs
- Low calorie oil spray
The first thing you need to do is pre heat your oven to 180 degrees then slice your veggies. Slice the carrots and parsnips into sticks, the pepper and onion into chunks and your baby potatoes in half.
Place them all in a baking dish with the sausages and spray oil onto them. Crush the oxo cubes and sprinkle the herbs. Mix well making sure everything is covered in oil. You will also need to make sure everything is on a single layer. I also add a splash of boiling water at this point.
Put it in the oven for about 40 minutes, until the sausages are cooked and the veggies are crisp. Serve immediately.
